OATMEAL RAISIN CHOCOLATE CHIP DROP COOKIES

Ingredients;
2 cups all-purpose flour
1 1/4 cups granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups rolled oats, quick or old-fashioned
1 cup raisins
3/4 cup chocolate chips
1 cup extra virgin olive oil
2 eggs
1/2 cup milk

Preparation;
Sift together dry ingredients; stir in rolled oats, raisins and chocolate chips. Stir in oil, eggs, and milk. Beat with a spoon until thoroughly blended. Drop by teaspoonfuls onto an ungreased baking sheet. Bake at 400° for 10 to 12 minutes. Makes about 6 dozen.

OATMEAL FUDGE COOKIES

Ingredients;
1 can (14 oz) sweetened condensed milk
2 squares (2 ounces) unsweetened chocolate
1 teaspoon vanilla extract
1 cup quick-cooking oats
1/2 cup chopped pecans

Preparation;
Place sweetened condensed milk and chocolate in top of double boiler over rapidly boiling water. Cook over boiling water, stirring constantly, until mixture is thick and no longer runs from spoon, about 6 to 8 minutes. Remove from heat. Stir in vanilla; blend in oats and nuts. Drop by teaspoonfuls onto greased baking sheet. Bake at 350° for about 10 minutes, or until firm. Remove from baking sheet immediately.

PEANUT BUTTER BUTTERSCOTCH OATMEAL COOKIES

Ingredients;
1 can (14 oz) sweetened condensed milk
4 ounces butterscotch chips
2 tablespoons of peanut butter (creamy or crunchy) 
1 teaspoon vanilla extract
1 cup quick-cooking oats
1/2 cup chopped pecans

Preparation;
Place sweetened condensed milk, butterscotch chips and peanut butter in top of double boiler over rapidly boiling water. Cook over boiling water, stirring constantly, until mixture is thick and no longer runs from spoon, about 6 to 10 minutes. Remove from heat. Stir in vanilla; blend in oats and nuts. Drop by teaspoonfuls onto greased baking sheet. Bake at 350° for about 10 minutes, or until firm. Remove from baking sheet immediately.

NO BAKE COOKIES

Ingredients;
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter (1 stick)
3 tablespoons peanut butter
1 teaspoon vanilla extract
1/2 cup chopped pecans
2 1/2 cups quick-cooking oats

Preparation;
Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla, peanut butter, and chopped nuts. Add oatmeal and stir to blend thoroughly. Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies.
