Bourbon Balls
These were popular back in the 1960's and are a often served during the Christmas season.
Ingredients
2 cups vanilla wafer crumbs (or substitute graham crackes)
1 cup powdered sugar, sifted
2 tablespoons unsweetened cocoa powder
1 cup finely chopped walnuts or pecans
1 1/2 tablespoons light corn syrup or honey
1/4 cup bourbon or rum (cherry brandy or peach schnapps is also good) Experiment!
Additional powdered sugar, sifted, for dusting
Directions
Mix dry ingredients together until well blended. Add liquids, blending with your hands, until the mixture is of moldable texture but not too wet.
Form the dough into balls about 3/4-inch in diameter. Roll in powdered sugar. You can eat these right away, but are much better if stored in a tightly covered tin and aged several days.
Makes about 40 bourbon balls.
Creme De Menthe Balls
Ingredients
1 cup vanilla wafer crumbs
2 tbsp light corn syrup
3/4 cup pecans, finely chopped
1/2 cup white or green creme de menthe
1 cup confectioners sugar
Directions
Combine vanilla wafers, pecans and sugar. Add syrup and creme de menthe blending with fork to make stiff dough. Form and roll in confectioners sugar. Chill overnight. Store in an airtight container.
